Guinness Brown Bread is a traditional Irish-style soda bread that uses Guinness stout for depth of flavor and baking soda as a leavening agent. Ina Garten’s version includes a touch of molasses, making the bread slightly sweet, soft, and perfect for spreading with butter or jam.

  • 2 cups whole wheat flour
  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/4 cup brown sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/4 cup molasses
  • 1 1/2 cups buttermilk mixed with 1 teaspoon unsweetened cocoa powder (to replace Guinness stout)
  • 2 tablespoons unsalted butter, melted

Instructions

Step 1: Preheat the Oven

  • Set the temperature: Preheat your oven to 375°F (190°C).
  • Prepare the pan: Grease a 9×5-inch loaf pan or line it with parchment paper.

Step 2: Mix the Dry Ingredients

  • Combine flours and oats: In a large mixing bowl, whisk together whole wheat flour, all-purpose flour, oats, brown sugar, baking soda, baking powder, and salt.

Step 3: Mix the Wet Ingredients

  • Combine liquids: In a separate bowl, whisk together molasses, buttermilk mixed with cocoa powder, and melted butter until well combined.

Step 4: Combine Wet and Dry Ingredients

  • Stir gently: Pour the wet ingredients into the dry ingredients and mix just until combined. Do not overmix, as this can make the bread dense.

Step 5: Bake the Bread

  • Transfer to loaf pan: Pour the batter into the prepared pan and smooth the top.
  • Bake until done: Bake for 45–50 minutes, or until a toothpick inserted in the center comes out clean.

Step 6: Cool and Serve

 

  • Let it cool: Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack.
  • Slice and enjoy: Serve warm with butter, jam, or cheese.
