Ina Garten’s Apple Muffins are moist and fluffy muffins made with fresh apples, warm spices like cinnamon and nutmeg, and a touch of vanilla. With chunks of apple in every bite and a golden-brown top, these muffins are a comforting and flavorful treat for any time of the day.

Ingredients

  • All-purpose flour – 2 cups
  • Granulated sugar – 1 cup
  • Brown sugar – ½ cup, packed
  • Baking powder – 2 tsp
  • Salt – ½ tsp
  • Ground cinnamon – 1 tsp
  • Ground nutmeg – ¼ tsp
  • Vegetable oil – ½ cup
  • Whole milk – ½ cup
  • Large eggs – 2
  • Vanilla extract – 1 tsp
  • Apples – 2 cups, peeled and diced (about 2 medium apples)
  • Optional toppings: Turbinado sugar, chopped nuts, or a cinnamon-sugar sprinkle

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease the cups lightly with cooking spray.
  2. Mix the Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, salt, cinnamon, and nutmeg.
  3. Combine the Wet Ingredients: In a separate bowl, whisk together the vegetable oil, milk, eggs, and vanilla extract until smooth.
  4. Incorporate the Apples: Add the wet ingredients to the dry ingredients and stir gently until just combined. Fold in the diced apples, being careful not to overmix.
  5. Fill the Muffin Tin: Divide the batter evenly among the prepared muffin cups, filling each about ¾ full. Sprinkle with turbinado sugar or your desired topping if using.
  6. Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. Cool and Serve: Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature.
