  • 1/4 pound (4 ounces) blue cheese, crumbled
  • 1/4 pound (1 stick) unsalted butter, softened
  • 1 cup all-purpose flour
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon cayenne pepper (optional)

Optional Add-Ins:

  • 1/4 cup chopped fresh rosemary or thyme
  • 1/4 cup finely chopped walnuts or pecans

Instructions

Step 1: Prepare the Dough

  • Cream the cheese and butter: In the bowl of an electric mixer fitted with the paddle attachment, cream the blue cheese and softened butter on medium speed until smooth and well combined, about 2–3 minutes.
  • Add the dry ingredients: Gradually add the flour, salt, black pepper, and cayenne (if using), mixing on low speed until the dough comes together. If adding herbs or nuts, fold them in at this stage.

Step 2: Shape the Dough

  • Form a log: Transfer the dough to a lightly floured surface and shape it into a log about 1 1/2 inches in diameter.
  • Wrap and chill: Wrap the log tightly in plastic wrap and refrigerate for at least 30 minutes, or until firm.

Step 3: Preheat the Oven

  • Set the temperature: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

Step 4: Slice and Bake

  • Slice the dough: Unwrap the chilled dough and slice it into 1/4-inch thick rounds using a sharp knife.
  • Arrange on a baking sheet: Place the rounds on the prepared baking sheet, leaving a little space between each.
  • Bake: Bake for 18–20 minutes, or until the edges are lightly golden.
  • Cool: Allow the crackers to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 5: Serve

  • Plate the crackers: Arrange the crackers on a serving platter or alongside your favorite dips and spreads.
