Ina Garten Cherry Clafoutis Recipe

Ina Garten Cherry Clafoutis

Cherry Clafoutis is a traditional French dessert made with fresh cherries baked in a rich, custard-like batter. The dish is slightly sweet with a creamy texture, often dusted with powdered sugar for a finishing touch. It’s versatile, easy to make, and perfect for showcasing the natural sweetness of cherries.

Ingredients

Scale
  • 1 tablespoon unsalted butter (for greasing the dish)
  • 1 pound fresh cherries, pitted
  • 1/2 cup granulated sugar
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 3 large eggs
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon almond extract (optional)
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon kosher salt
  • Powdered sugar (for garnish)

Instructions

  • Preheat the oven: Preheat your oven to 350°F (175°C). Grease a 9-inch round baking dish or pie dish with butter.
  • Prepare the cherries: Pit the cherries and arrange them in an even layer at the bottom of the greased dish.
  • Make the batter: In a blender, combine the sugar, milk, cream, eggs, vanilla extract, almond extract (if using), flour, and salt. Blend until smooth and well combined.
  • Pour the batter: Pour the batter over the cherries, ensuring they are evenly distributed in the dish.
  • Bake the clafoutis: Place the dish in the preheated oven and bake for 35–40 minutes, or until the custard is set and the top is golden. A toothpick inserted into the center should come out clean.
  • Cool and serve: Allow the clafoutis to cool slightly before dusting with powdered sugar. Serve warm or at room temperature.
