Ina Garten’s Greek Salad Dressing is a zesty vinaigrette made with good-quality olive oil, red wine vinegar, fresh lemon juice, garlic, oregano, Dijon mustard, and seasoning. It captures the essence of Greek flavors and complements both simple greens and hearty, traditional Greek salads.
1 teaspoon Dijon mustard
1 large clove of garlic, minced
1 teaspoon dried oregano
1½ tablespoons freshly squeezed lemon juice
2 tablespoons red wine vinegar
½ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
⅓ cup good-quality olive oil
In a small bowl or mason jar, whisk together the Dijon mustard, minced garlic, dried oregano, lemon juice, red wine vinegar, salt, and pepper.
Slowly drizzle in the olive oil while whisking continuously, or add all ingredients to a jar and shake vigorously until well combined and emulsified.
Taste the dressing and adjust lemon juice, vinegar, or seasoning if needed. Use immediately or refrigerate in a sealed container.
This dressing can be used immediately or stored in the refrigerator for up to 5 days. Shake or whisk again before each use.
