Green Goddess Dressing is a classic American sauce made with mayonnaise, sour cream, and fresh herbs like parsley, scallions, and tarragon. Ina Garten’s version stays true to the original but emphasizes clean flavors and a balanced creamy texture, making it a signature Barefoot Contessa favorite.
1 cup good-quality mayonnaise
1 cup sour cream (or Greek yogurt for a lighter option)
1 cup chopped scallions (white and green parts, about 5–6 scallions)
1 cup chopped fresh basil leaves
¼ cup chopped fresh parsley
2 tablespoons chopped fresh tarragon (or substitute with more basil)
2 tablespoons freshly squeezed lemon juice
2 teaspoons anchovy paste (optional, but adds rich umami)
1 garlic clove, minced
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
Wash and roughly chop the herbs. Slice scallions and mince the garlic. Measure all other ingredients.
In a food processor or blender, combine mayonnaise, sour cream, scallions, basil, parsley, tarragon, lemon juice, anchovy paste (if using), garlic, salt, and pepper. Blend until the herbs are finely chopped and the dressing is smooth and pale green.
Transfer to a jar or airtight container. Refrigerate for at least 1 hour before serving to let the flavors meld. Shake or stir before use.
