Ina Garten’s Peach Cobbler Recipe

Ina Garten Peach Cobbler

Peach cobbler is a baked dessert made by layering ripe peaches with a biscuit-like or cake-like topping. Ina Garten’s version highlights the natural sweetness of fresh peaches and uses a simple yet flavorful topping for the perfect balance of textures.

Ingredients

For the Filling

  • Fresh peaches – 6-8 large (about 4 cups), peeled and sliced
  • Granulated sugar – ½ cup
  • Brown sugar – ¼ cup, packed
  • Cornstarch – 2 tablespoons
  • Lemon juice – 1 tablespoon, freshly squeezed
  • Ground cinnamon – ½ teaspoon
  • Vanilla extract – 1 teaspoon

For the Topping

  • All-purpose flour – 1 cup
  • Granulated sugar – ½ cup
  • Brown sugar – ¼ cup, packed
  • Baking powder – 1 teaspoon
  • Salt – ¼ teaspoon
  • Unsalted butter – 6 tablespoons, cold and diced
  • Boiling water – ¼ cup

For the Topping Finish

  • Ground cinnamon – ½ teaspoon
  • Granulated sugar – 2 tablespoons

Instructions

Preheat the Oven

  • Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or nonstick spray.

Prepare the Peach Filling

  • In a large bowl, combine the sliced peaches, granulated sugar, brown sugar, cornstarch, lemon juice, cinnamon, and vanilla extract. Toss gently until the peaches are evenly coated.
  • Pour the peach mixture into the prepared baking dish, spreading it evenly.

Make the Topping

  • In another bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, and salt.
  • Add the diced cold butter and use your fingers or a pastry cutter to mix until the mixture resembles coarse crumbs.
  • Stir in the boiling water just until the topping comes together.

Assemble the Cobbler

  • Drop spoonfuls of the topping over the peaches, spreading it slightly but leaving some gaps for the peaches to show through.
  • Mix the cinnamon and sugar for the topping finish and sprinkle it evenly over the dough.

Bake the Cobbler

  • Bake in the preheated oven for 40-45 minutes, or until the topping is golden brown and the peach filling is bubbly.

Cool and Serve

  • Let the cobbler cool for at least 10 minutes before serving. Serve warm with vanilla ice cream or whipped cream.
