  • 1/2 cup light brown sugar, packed
  • 1/2 teaspoon kosher salt
  • 1 cup old-fashioned oats
  • 1/2 pound (2 sticks) cold unsalted butter, diced

Instructions

Step 1: Prepare the Fruit Filling

    • Preheat the oven: Preheat your oven to 350°F (175°C).

    • Mix the filling: In a large bowl, combine the sliced peaches, raspberries, granulated sugar, brown sugar, flour, lemon juice, and lemon zest. Toss gently to coat the fruit evenly.

    • Transfer to a baking dish: Pour the fruit mixture into a 9×13-inch baking dish or similar-sized ovenproof dish.

Step 2: Make the Crisp Topping

    • Combine the dry ingredients: In a medium bowl, mix the flour, granulated sugar, brown sugar, salt, and oats.

    • Cut in the butter: Add the cold, diced butter to the dry ingredients. Using a pastry cutter or your fingers, mix until the topping resembles coarse crumbs.

Step 3: Assemble and Bake

    • Add the topping: Sprinkle the crisp topping evenly over the fruit mixture in the baking dish.

    • Bake the crisp: Place the dish in the preheated oven and bake for 40–45 minutes, or until the topping is golden brown and the fruit is bubbling.
