Ingredients

For the Pastry:

  • All-purpose flour: 1 1/4 cups
  • Granulated sugar: 1 tablespoon
  • Salt: 1/2 teaspoon
  • Unsalted butter: 1/2 cup (cold, diced)
  • Ice water: 3–4 tablespoons

For the Filling:

  • Pears: 3 large (ripe but firm), peeled, cored, and thinly sliced
  • Granulated sugar: 1/4 cup
  • Lemon juice: 1 tablespoon
  • Vanilla extract: 1 teaspoon
  • Cinnamon: 1/2 teaspoon
  • All-purpose flour: 1 tablespoon

For the Glaze:

  • Egg yolk: 1, beaten with 1 teaspoon of water
  • Coarse sugar: 1 tablespoon

Optional Garnish:

  • Vanilla ice cream or whipped cream

Instructions

Step 1: Prepare the pastry

  • In a food processor, combine the flour, sugar, and salt. Add the cold butter and pulse until the mixture resembles coarse crumbs.
  • Gradually add the ice water, 1 tablespoon at a time, pulsing until the dough just comes together.
  • Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Step 2: Preheat the oven

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Step 3: Prepare the filling

  • In a mixing bowl, toss the sliced pears with sugar, lemon juice, vanilla extract, cinnamon, and flour. Ensure the pears are evenly coated.

Step 4: Roll out the pastry

  • On a lightly floured surface, roll out the chilled pastry into a 12-inch circle. Transfer it to the prepared baking sheet.

Step 5: Assemble the galette

  • Arrange the pear slices in the center of the pastry, leaving a 2-inch border. Fold the edges of the pastry over the filling, pleating as needed to form a rustic shape.

Step 6: Add the glaze

  • Brush the pastry edges with the beaten egg yolk and sprinkle with coarse sugar.

Step 7: Bake the galette

  • Bake for 40–45 minutes, or until the crust is golden brown and the pears are tender.

Step 8: Cool and serve

  • Let the galette cool slightly before serving. Serve warm or at room temperature with a scoop of vanilla ice cream or a dollop of whipped cream.
